Fife N Honey: Fibonacci Collaboration Beer Release 

 

In celebration of StartUp Cincy and Samuel Adams support for small business, we are excited to share a collaboration with our friends at Fibonacci Brewing Company releasing on draft our taproom October 25th.

Fibonacci Brewery was founded by Betty Bollas and her husband, Bob. Betty has a deep love for plants, while Bob is passionate about math. They merged their interests in the brewing process, where plant-based ingredients and biochemistry come together to create beer as a form of liquid culinary art. In 2015, they decided to start their brewery, naming it Fibonacci as a representation of the application of mathematics to the natural world. The brewery, located in Mount Healthy, just north of Cincinnati, has a taproom and brewhouse, a spacious shaded beer garden and even houses two brewery goats, chickens, and honeybees.

We first connected with Betty and Bob Bollas when they applied to our Brewing the American Dream Brewer Experienceship Competition. Since 2008, Samuel Adams has supported food and beverage entrepreneurs with access to capital, networking, and coaching through our Brewing the American Dream program. The Brewer Experienceship provides the opportunity for one brewery each year to come to Boston and learn at the brewery that started it all. We share our brewing experience, business acumen, marketing expertise, and provide financial support and funding to check out important business building and networking events like The Great American Beer Festival. Fibonacci went on to become one of the finalists in 2022 and we’re stoked to continue our relationship with this collaboration.

Fife N’ Honey is an amber lager that uses local honey and an old heirloom wheat called fife. Fife has a deeper root system and holds topsoil intact better than barley, reducing water runoff and soil erosion and supporting the sustainability goals of both Bob and our head brewer, Chris Seigman.

Similar to beers like our Tractor Beer and Unmalted Lager, which use unmalted barley to lower the carbon footprint, Fibonacci brews with the environment in mind. Plants play a significant role in Fibonacci's unique beer creations, and the Bollases incorporate many foraged ingredients. They use local pawpaws for a wheat beer and neighborhood mulberries for a sour ale. Additionally, they source herbs and produce locally, often from their own urban farm, which includes fruit trees, nut bushes, mushrooms, and various herbs like mint, lemon balm, and chocolate mint. Betty's goal is for at least 90% of their beers to contain local ingredients.

Fife N' Honey releases on draft at the Taproom next on Wednesday, October 25th. Drop by for a pint and be sure to keep an eye on new things happening at Fibonacci as they increase their on-site plant cultivation and begin introducing their own food options to their taproom menu.
